Cheesy Beef Taco Pockets

Ingredients:

For the Filling:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 packet (about 1.25 ounces) taco seasoning mix
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, shredded lettuce, sour cream, salsa

For the Dough:

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 1 cup milk

Instructions:

Step 1: Prepare the Filling

  1. Heat the olive oil in a large skillet over medium heat. Add diced onions and cook until translucent, about 2-3 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned.
  4. Drain excess fat from the skillet.
  5. Stir in the taco seasoning mix and water. Simmer for 5-7 minutes until the liquid reduces and thickens.
  6. Season with salt and pepper according to taste.
  7. Remove the skillet from heat and let the beef mixture cool slightly.
  8. Stir in shredded cheddar cheese until it melts and combines with the beef mixture. Set aside.
