Sautéed Purple Potatoes and Green Beans with Smoked Sausage
Ingredients:
- 1 pound smoked sausage, sliced
- 1 pound purple potatoes, washed and diced
- 1 pound fresh green beans, trimmed
- 2 tablespoons olive oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon Slap Ya Mama seasoning (or Cajun seasoning of your choice)
- Salt and pepper to taste
Instructions:
- Prepare Ingredients:
- Slice the smoked sausage into rounds.
- Wash and dice the purple potatoes into bite-sized pieces.
- Trim the ends of the fresh green beans.
- Brown the Sausage:
- In a large skillet or frying pan, brown the sliced smoked sausage over medium-high heat until lightly caramelized, stirring occasionally. This will take about 5-7 minutes.
- Add Potatoes and Green Beans:
- Once the sausage is browned, push it to one side of the skillet and add olive oil to the empty space. Let the oil heat up for a minute.
- Add the diced purple potatoes and trimmed green beans to the skillet. Spread them out in an even layer.
- Seasoning:
- Sprinkle the onion powder, garlic powder, and Slap Ya Mama seasoning (or your preferred Cajun seasoning) over the potatoes and green beans. Season with salt and pepper to taste.
- Sauté:
- Let the vegetables and sausage cook undisturbed for a few minutes to allow them to brown slightly on one side. Then, using a spatula, flip them over to ensure even cooking.
- Simmer:
- Once the vegetables and sausage are well-cooked and have started to brown, reduce the heat to low. Cover the skillet with a lid and let the mixture simmer gently for about 10-15 minutes or until the potatoes are tender and the green beans are cooked to your liking. Stir occasionally to prevent sticking.
- Serve:
- Once everything is cooked to perfection, remove the skillet from the heat. Serve the sautéed purple potatoes and green beans with smoked sausage hot as a delicious and hearty meal.
