Mexican Shrimp Cocktail

Directions

1. Prepare the Shrimp

If using raw shrimp, bring a pot of salted water to a boil. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Drain and rinse under cold water to stop the cooking process. If using pre-cooked shrimp, simply thaw them if frozen and set aside.

2. Make the Cocktail Sauce

In a large mixing bowl, combine the tomato juice, ketchup, and lime juice. Stir well to combine.

3. Mix in the Vegetables

Add the chopped red onion, cucumber, avocado, cilantro, and jalapeños to the cocktail sauce. Stir gently to combine, being careful not to mash the avocado.

4. Add the Shrimp

Fold the cooked shrimp into the mixture. Season with salt and pepper to taste. Mix gently until all the shrimp are coated in the sauce.

5. Chill and Serve

Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled in individual cups or bowls, garnished with lime wedges and additional cilantro. Accompany with tortilla chips for dipping.
