Instructions:
- Preheat the oven to 350 degrees Fahrenheit. Spray a 9×13 inch baking dish with nonstick cooking spray.
- Cook the sausage in a skillet until cooked through. Remove the sausage to a paper towel-lined plate and drain the skillet of all fat. Slice the sausage into 1/2 inch pieces.
- Cook the bacon in the same skillet until brown and crispy. Drain the bacon on a paper towel-lined plate. Crumble the bacon.
- Arrange the tater tots in a single layer in the prepared baking dish.
- In a mixing bowl, whisk together the eggs, milk, 1/4 cup of green onions, salt, and pepper. Stir in the cooked sausage and half of the crumbled bacon.
- Fold in 1 cup of Monterey Jack cheese and 1 cup of cheddar cheese into the egg mixture. Pour the egg mixture over the tater tots in the baking dish.
- Bake in the preheated oven until the egg mixture is set, approximately 40-45 minutes.
- Sprinkle the top evenly with the remaining 1 cup of cheddar cheese, and return the dish to the oven for about 5-7 minutes until the cheese is melted.
- Allow the casserole to stand for 10 minutes before cutting. Sprinkle with the remaining half of the crumbled bacon and green onions, then serve.
