- 1 pound spaghetti
- 2 cups cooked chicken, shredded or diced
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1 can (10.5 ounces) condensed cream of mushroom soup
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup diced onion
- 1/2 cup diced green bell pepper
- 1/2 cup diced red bell pepper
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Recipe Directions
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers and cook until softened, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
- Stir in the condensed cream of chicken soup, condensed cream of mushroom soup, and chicken broth until well combined.
- Add the shredded chicken, dried oregano, dried basil, salt, and pepper. Stir until everything is evenly coated.
- Reduce the heat to low and simmer for 10 minutes, allowing the flavors to meld together.
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked spaghetti with the chicken mixture and half of the shredded cheddar and mozzarella cheese. Mix until well combined.
- Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the remaining cheese evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped fresh parsley, if desired, before serving.
