Apple Fritter Cake

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch (23×23 cm) square baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set this dry mixture aside.
  3. In a large bowl, cream together the softened butter and 1 cup of granulated sugar until the mixture is light and fluffy. This can take a few minutes.
  4. Beat in the eggs, one at a time, and then stir in the vanilla extract.
  5. Gradually add the dry mixture to the wet mixture, alternating with the sour cream. Start and end with the dry mixture. Mix until just combined.
  6. In a separate bowl, mix the chopped apples with 1/2 cup of granulated sugar and 1 teaspoon of cinnamon.
  7. Spread half of the cake batter into the prepared pan. Spread the apple mixture evenly over the batter. Drop the remaining cake batter in small spoonfuls over the apples.
  8. In a small bowl, combine the 1/4 cup granulated sugar, 1/4 cup brown sugar, and 1 teaspoon of cinnamon for the topping. Sprinkle this mixture evenly over the cake batter.
  9. Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean. The cake should be golden brown and slightly firm to the touch.
  10. Allow the apple fritter cake to cool in the pan for about 10-15 minutes before serving.
