Instructions:
- Preheat your oven to 350°F (180°C).
- In a mixing bowl, cream the butter and 1/2 cup of powdered sugar together until light and fluffy. You can use an electric mixer for this step.
- Add the vanilla extract and mix until well combined.
- In a separate bowl, whisk together the flour and salt.
- Gradually add the dry ingredients to the butter mixture and mix until the dough comes together.
- Stir in the finely chopped nuts. This is what gives the cookies their delightful texture.
- Shape the dough into 1-inch (2.5 cm) balls and place them on an ungreased baking sheet. You can space them about an inch apart.
- Bake in the preheated oven for about 10-12 minutes, or until the cookies are set but not browned. Be careful not to overbake them.
- Remove the cookies from the oven and let them cool for a few minutes on the baking sheet.
- While they are still warm, roll each cookie in powdered sugar. This gives them their “snowball” appearance.
- Allow the cookies to cool completely, and then roll them in powdered sugar once more for a thicker coating.
- Store the snowball cookies in an airtight container. They are best enjoyed when they’ve had a chance to sit for a day or so, as the powdered sugar coating tends to meld with the cookie, creating a delicious, sweet layer.
These cookies are simple to make and are perfect for holiday gatherings, cookie exchanges, or any time you want a delicious treat with a delightful texture. Enjoy!
