Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, lemon juice, vanilla extract, ground cinnamon, and cornstarch. Toss the mixture together until the peaches are well-coated. Let the mixture sit for a few minutes to allow the sugars to start drawing out the peach juices.
- Pour the peach mixture into a 9×9-inch baking dish or a similar-sized pie dish.
- In a separate bowl, prepare the cobbler topping by whisking together the flour, granulated sugar, milk, melted butter, baking powder, salt, and a pinch of ground cinnamon if desired. Mix until the batter is smooth.
- Carefully spoon the cobbler topping over the peach mixture. You can use the back of a spoon to spread it evenly, but it’s okay if it’s not perfect.
