Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium-high heat until it’s browned and crumbled. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet and cook for a few minutes until the onion becomes translucent.
- Stir in the cumin, chili powder, salt, and pepper. Mix well to evenly distribute the seasonings.
- Add the diced tomatoes and green chilies to the skillet and cook for a few more minutes to combine the flavors.
- Grease a 9×13-inch baking dish. Place 2 tortillas on the bottom of the dish, overlapping them slightly.
- Spoon half of the beef mixture over the tortillas and spread it evenly.
- Pour half of the enchilada sauce over the beef layer.
- Sprinkle a third of the shredded cheese on top of the sauce.
- Repeat the layers by placing 2 more tortillas, the remaining beef mixture, and another third of the cheese.
- Top with the final 2 tortillas and the rest of the enchilada sauce.
- Finish by adding the remaining cheese on top.
- Cover the casserole with aluminum foil and bake in the preheated oven for 25-30 minutes, or until it’s heated through and the cheese is melted.
- If desired, you can remove the foil for the last 5-10 minutes of baking to brown the cheese slightly.
- Once the casserole is done, remove it from the oven and let it cool for a few minutes before serving.
- Garnish with sour cream, diced tomatoes, sliced olives, and fresh cilantro if you like.
