Saltine Toffee Cookies

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×13-inch (23×33 cm) baking sheet with aluminum foil and grease it with non-stick cooking spray. Place the saltine crackers in a single layer on the prepared baking sheet.
  3. In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar and bring the mixture to a boil. Once it’s boiling, reduce the heat and simmer for 3-5 minutes, or until it thickens and becomes a caramel-like consistency. Be sure to stir constantly to prevent burning.
  4. Pour the caramel mixture evenly over the saltine crackers. Use a spatula to spread it if necessary to ensure it covers all the crackers.
  5. Place the baking sheet in the preheated oven and bake for about 5-7 minutes, or until the toffee is bubbling and has turned a deep amber color.
  6. Remove the baking sheet from the oven and immediately sprinkle the chocolate chips evenly over the hot toffee. Allow them to sit for a minute or two to soften, and then use a spatula or the back of a spoon to spread the melted chocolate evenly over the toffee.
  7. If you’re using nuts, sprinkle them over the melted chocolate while it’s still warm.
  8. Let the toffee cookies cool at room temperature for a few hours or until the chocolate is set and the toffee has hardened.
  9. Once completely cooled and set, break the toffee into pieces. You can do this by hand or use a knife to make neat squares or rectangles.
  10. Store the saltine toffee cookies in an airtight container at room temperature. They also make a wonderful gift during the holiday season.
