Instructions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish or a similar-sized baking dish.
2. Prepare the Filling:
- In a large bowl, gently toss the fresh blackberries with sugar, cornstarch, lemon juice, and lemon zest until well combined.
- Allow the mixture to sit for about 15-20 minutes to let the berries release their juices.
3. Make the Cobbler Topping:
- In another bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cubed cold butter into the dry ingredients. Use a pastry cutter or your fingers to mix the butter into the dry mixture until it resembles coarse crumbs.
- Pour in the boiling water and stir until just combined. Do not overmix.
4. Assemble the Cobbler:
- Spread the blackberry mixture evenly into the prepared baking dish.
- Using a spoon, drop dollops of the cobbler topping over the blackberries. Try to cover the majority of the filling with the dough. It’s okay if some parts aren’t fully covered.
5. Bake the Cobbler:
- Sprinkle the remaining 2 tablespoons of sugar over the cobbler topping.
- Place the baking dish in the preheated oven and bake for about 45-50 minutes or until the topping is golden brown, and the blackberry filling is bubbling around the edges.

- Allow the cobbler to cool for a few minutes before serving.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
