Candied Pecans

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat. This will prevent the pecans from sticking to the sheet while baking.
  2. Prepare the Pecans: Spread the pecan halves evenly on the prepared baking sheet. Place the baking sheet in the preheated oven and toast the pecans for 8-10 minutes, or until they become fragrant. Keep an eye on them to prevent burning. Remove from the oven and set aside.
  3. Make the Candied Coating: In a medium saucepan over medium heat, combine the granulated sugar, brown sugar, water, vanilla extract, cinnamon (if using), and salt. Stir the mixture until the sugars dissolve completely.
  4. Cook the Syrup: Bring the sugar mixture to a simmer without stirring. Allow it to cook for around 2-3 minutes, or until it reaches a temperature of 235°F (113°C) on a candy thermometer. This will create a syrupy consistency.
  5. Add the Pecans: Once the syrup reaches the desired temperature and consistency, remove it from the heat. Quickly add the toasted pecans to the saucepan with the syrup, using a spatula or wooden spoon to gently fold and coat the pecans evenly.
  6. Spread on Baking Sheet: Using the same lined baking sheet, spread the coated pecans in a single layer, ensuring they are not clumped together. Try to separate them to prevent large clusters from forming.
  7. Cooling Process: Allow the pecans to cool completely at room temperature. As they cool, the syrup will harden, creating the crunchy candy coating around the pecans.
  8. Break Apart and Store: Once completely cooled and hardened, break apart any clusters of candied pecans. Store them in an airtight container or sealable bags at room temperature. They should last for several weeks, although they’re so delicious they might not last that long!

Candied pecans make for a wonderful addition to various dishes or are simply perfect for snacking. Experiment with different spices like a pinch of cayenne for a spicy kick or adding a dash of nutmeg for a seasonal twist. Enjoy this delightful treat!
