For Assembling:

  • 1 box (12 ounces) vanilla wafers
  • 6 ripe bananas, sliced
  • 1 tablespoon lemon juice (to prevent browning)

For the Meringue (optional):

  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Prepare the Pudding Base:
    • In a medium-sized saucepan, whisk together sugar, flour, and salt.
    • In a separate bowl, whisk together egg yolks and milk until well combined.
    • Gradually add the egg mixture to the dry ingredients in the saucepan, whisking continuously to avoid lumps.
    • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil.
    • Once thickened, remove from heat and stir in the vanilla extract. Allow the pudding to cool slightly.
  2. Layering the Pudding:
    • In a trifle dish or a large serving bowl, start by layering a portion of the vanilla wafers at the bottom.
    • Drizzle some of the pudding over the cookies, spreading it evenly to cover the surface.
    • Place a layer of sliced bananas over the pudding, and sprinkle with lemon juice to prevent browning.
    • Repeat the layering process, ending with a final layer of pudding on top.
