For Assembling:
- 1 box (12 ounces) vanilla wafers
- 6 ripe bananas, sliced
- 1 tablespoon lemon juice (to prevent browning)
For the Meringue (optional):
- 4 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
Instructions:
- Prepare the Pudding Base:
- In a medium-sized saucepan, whisk together sugar, flour, and salt.
- In a separate bowl, whisk together egg yolks and milk until well combined.
- Gradually add the egg mixture to the dry ingredients in the saucepan, whisking continuously to avoid lumps.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil.
- Once thickened, remove from heat and stir in the vanilla extract. Allow the pudding to cool slightly.
- Layering the Pudding:
- In a trifle dish or a large serving bowl, start by layering a portion of the vanilla wafers at the bottom.
- Drizzle some of the pudding over the cookies, spreading it evenly to cover the surface.
- Place a layer of sliced bananas over the pudding, and sprinkle with lemon juice to prevent browning.
- Repeat the layering process, ending with a final layer of pudding on top.
