Sautéed Purple Potatoes and Green Beans with Smoked Sausage

Ingredients:

  • 1 pound smoked sausage, sliced
  • 1 pound purple potatoes, washed and diced
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Slap Ya Mama seasoning (or Cajun seasoning of your choice)
  • Salt and pepper to taste

Instructions:

  1. Prepare Ingredients:
    • Slice the smoked sausage into rounds.
    • Wash and dice the purple potatoes into bite-sized pieces.
    • Trim the ends of the fresh green beans.
  2. Brown the Sausage:
    • In a large skillet or frying pan, brown the sliced smoked sausage over medium-high heat until lightly caramelized, stirring occasionally. This will take about 5-7 minutes.
  3. Add Potatoes and Green Beans:
    • Once the sausage is browned, push it to one side of the skillet and add olive oil to the empty space. Let the oil heat up for a minute.
    • Add the diced purple potatoes and trimmed green beans to the skillet. Spread them out in an even layer.
  4. Seasoning:
    • Sprinkle the onion powder, garlic powder, and Slap Ya Mama seasoning (or your preferred Cajun seasoning) over the potatoes and green beans. Season with salt and pepper to taste.
  5. Sauté:
    • Let the vegetables and sausage cook undisturbed for a few minutes to allow them to brown slightly on one side. Then, using a spatula, flip them over to ensure even cooking.
  6. Simmer:
    • Once the vegetables and sausage are well-cooked and have started to brown, reduce the heat to low. Cover the skillet with a lid and let the mixture simmer gently for about 10-15 minutes or until the potatoes are tender and the green beans are cooked to your liking. Stir occasionally to prevent sticking.
  7. Serve:
    • Once everything is cooked to perfection, remove the skillet from the heat. Serve the sautéed purple potatoes and green beans with smoked sausage hot as a delicious and hearty meal.
