DIRECTIONS
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mix diced peaches with granulated sugar, lemon juice, cinnamon, and nutmeg. Set aside to macerate for about 15 minutes.
- Place an egg roll wrapper on a clean surface with one corner facing you. Spoon a portion of the peach mixture onto the center of the wrapper.
- Fold the corner facing you over the filling, tucking it in. Fold in the sides, then roll it up tightly.
- Brush the edges with melted butter to seal the egg roll.
- Repeat for all egg rolls and place them on the prepared baking sheet.
- Brush the tops of the egg rolls with remaining melted butter and sprinkle with brown sugar.
- Bake for 15-18 minutes or until golden brown and crisp.
- Serve the Peach Cobbler Egg Rolls warm, optionally with a scoop of vanilla ice cream.
