Peach Cobbler Egg Rolls

DIRECTIONS

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix diced peaches with granulated sugar, lemon juice, cinnamon, and nutmeg. Set aside to macerate for about 15 minutes.
  3. Place an egg roll wrapper on a clean surface with one corner facing you. Spoon a portion of the peach mixture onto the center of the wrapper.
  4. Fold the corner facing you over the filling, tucking it in. Fold in the sides, then roll it up tightly.
  5. Brush the edges with melted butter to seal the egg roll.
  6. Repeat for all egg rolls and place them on the prepared baking sheet.
  7. Brush the tops of the egg rolls with remaining melted butter and sprinkle with brown sugar.
  8. Bake for 15-18 minutes or until golden brown and crisp.
  9. Serve the Peach Cobbler Egg Rolls warm, optionally with a scoop of vanilla ice cream.
