Instructions:
- Place the chicken pieces in a large bowl and cover them with buttermilk. Let them soak for at least 1 hour, or overnight in the refrigerator for best results.
- In a separate bowl, mix together the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper.
- Remove the chicken from the buttermilk, letting any excess drip off, and dredge each piece in the flour mixture, making sure to coat it thoroughly.
- Heat vegetable oil in a large, heavy-bottomed pot over medium-high heat until it reaches 350°F (180°C).
- Carefully place the chicken pieces in the hot oil, being careful not to overcrowd the pot. Fry the chicken in batches if necessary.
- Fry the chicken for about 15-20 minutes, turning occasionally, until it is golden brown and crispy and the internal temperature reaches 165°F (74°C).
- Remove the chicken from the oil and place it on a wire rack set over a baking sheet to drain excess oil.
- Serve the fried chicken hot, with your favorite sides and sauces. Enjoy your extra crispy fried chicken!
