Instructions:

  1. Place the chicken pieces in a large bowl and cover them with buttermilk. Let them soak for at least 1 hour, or overnight in the refrigerator for best results.
  2. In a separate bowl, mix together the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper.
  3. Remove the chicken from the buttermilk, letting any excess drip off, and dredge each piece in the flour mixture, making sure to coat it thoroughly.
  4. Heat vegetable oil in a large, heavy-bottomed pot over medium-high heat until it reaches 350°F (180°C).
  5. Carefully place the chicken pieces in the hot oil, being careful not to overcrowd the pot. Fry the chicken in batches if necessary.
  6. Fry the chicken for about 15-20 minutes, turning occasionally, until it is golden brown and crispy and the internal temperature reaches 165°F (74°C).
  7. Remove the chicken from the oil and place it on a wire rack set over a baking sheet to drain excess oil.
