Cheesecake Cookies

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the butter, sugar, and cream cheese together until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, and beat until well combined.
  5. Gradually add the flour mixture to the wet ingredients, and mix until just combined.
  6. Place the graham cracker crumbs in a small bowl.
  7. Scoop out about a tablespoon of dough and roll it into a ball. Roll the ball in the graham cracker crumbs until fully coated.
  8. Place the coated ball on the prepared baking sheet and flatten it slightly with your fingers.
  9. Repeat with the remaining dough, spacing the cookies about 2 inches apart on the baking sheet.
  10. Bake the cookies for 10-12 minutes, or until the edges are set and the tops are slightly golden.
  11. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
