Instructions:
- Cut the salmon fillet into sticks, about 1 inch wide and 3-4 inches long. Season with salt, pepper, and 1 tablespoon of lemon pepper seasoning.
- Set up a breading station with three shallow dishes. Place flour in the first dish, beaten eggs in the second dish, and panko breadcrumbs mixed with the remaining lemon pepper seasoning in the third dish.
- Dredge each salmon stick in the flour, then dip into the beaten eggs, and finally coat with the panko breadcrumb mixture. Press the breadcrumbs gently to adhere.
- Heat vegetable oil in a large skillet over medium-high heat. Fry the salmon sticks in batches for 2-3 minutes per side, or until golden brown and cooked through. Drain on a paper towel-lined plate.
- In a small bowl, mix together the blue cheese crumbles, mayonnaise, Old Bay seasoning, lemon juice, and chopped parsley to make the dipping sauce.
