Directions:
- Preheat oven to 375°F (190°C).
- In a skillet, heat 1 tablespoon olive oil over medium heat. Add bell peppers, onions, garlic, and celery. Sauté for 3-4 minutes until softened.
- Add shrimp, Cajun seasoning, thyme, salt, and pepper to the skillet. Cook for 2-3 minutes until shrimp turn pink.
- Stir in cooked rice and green onions. Remove from heat and let the mixture cool slightly.
- Lay catfish fillets flat on a clean surface. Divide the shrimp and rice mixture evenly among the fillets, placing it on one end of each fillet.
- Roll up each fillet, starting from the filled end, and secure with toothpicks.
- Place the stuffed catfish rolls in a greased baking dish. Drizzle with the remaining olive oil.
- Bake for 25-30 minutes, or until the catfish is cooked through and flakes easily with a fork.
- Serve hot with lemon wedges for garnish.
