Stuffed catfish

Directions:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat 1 tablespoon olive oil over medium heat. Add bell peppers, onions, garlic, and celery. Sauté for 3-4 minutes until softened.
  3. Add shrimp, Cajun seasoning, thyme, salt, and pepper to the skillet. Cook for 2-3 minutes until shrimp turn pink.
  4. Stir in cooked rice and green onions. Remove from heat and let the mixture cool slightly.
  5. Lay catfish fillets flat on a clean surface. Divide the shrimp and rice mixture evenly among the fillets, placing it on one end of each fillet.
  6. Roll up each fillet, starting from the filled end, and secure with toothpicks.
  7. Place the stuffed catfish rolls in a greased baking dish. Drizzle with the remaining olive oil.
  8. Bake for 25-30 minutes, or until the catfish is cooked through and flakes easily with a fork.
  9. Serve hot with lemon wedges for garnish.
