Bourbon Bacon Jam

Instructions:

  1. Cook the Bacon:
    • In a large skillet over medium heat, cook the bacon pieces until they are browned and crispy. This may take about 10-15 minutes. Once cooked, use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain. Reserve about 2 tablespoons of bacon fat in the skillet.
  2. Sauté the Onion and Garlic:
    • In the same skillet with the reserved bacon fat, add the chopped onion. Cook over medium heat until the onions are soft and translucent, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes, or until fragrant.
  3. Deglaze with Bourbon:
    • Pour in the bourbon to deglaze the pan, scraping up any browned bits from the bottom of the skillet. Allow the bourbon to simmer and reduce slightly, about 2-3 minutes.
  4. Add Remaining Ingredients:
    • Return the cooked bacon to the skillet. Add the maple syrup, brown sugar, apple cider vinegar, and chili powder (if using). Stir well to combine.
  5. Simmer:
    • Reduce the heat to low and let the mixture simmer gently. The mixture should thicken and reduce, becoming jam-like in consistency, which will take about 20-30 minutes. Stir occasionally to prevent sticking and ensure even cooking.
  6. Season:
    • Once the mixture has thickened to your liking, taste and adjust the seasoning with salt and black pepper. Remember, the bacon brings its own saltiness, so add salt cautiously.
  7. Blend (Optional):
    • For a smoother jam, you can use an immersion blender to lightly blend the mixture right in the skillet. Alternatively, let the mixture cool slightly and then transfer it to a food processor, pulsing a few times to reach your desired consistency.
  8. Cool and Store:
    • Allow the bourbon bacon jam to cool completely. Transfer it to airtight jars or containers and refrigerate. The jam will thicken further as it cools.
