- Preheat Oven: Set your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease a baking sheet if you prefer a firmer crust on your meatloaf.
- Mix Ingredients: In a large bowl, combine the ground beef, egg, onion, milk, bread crumbs, 1/4 cup ketchup, Worcestershire sauce, garlic, salt, pepper, and thyme. If using, also add the bell pepper or carrot. Mix everything together until just combined. Avoid overmixing to prevent the meatloaf from becoming tough.
- Shape the Meatloaf: Transfer the mixture to the prepared loaf pan and press it down into an even layer. If using a baking sheet, form the mixture into a loaf shape directly on the sheet.
- Prepare the Glaze: In a small bowl, mix together the 1/2 cup ketchup, brown sugar, apple cider vinegar, and mustard. Spread half of this mixture over the top of the meatloaf before baking. Reserve the remaining glaze for later.
- Bake: Place the meatloaf in the oven and bake for about 1 hour, or until the internal temperature reaches 160°F (71°C). Halfway through the baking time, spread the remaining glaze over the top if desired.
