Ingredients

  • 4 catfish fillets
  • 1 cup white rice
  • 1 cup chicken broth

  • 1/2 cup buttermilk
  • 1 egg
  • 1/2 cup shredded cheddar cheese
  • 1 can refrigerated biscuit dough
  • 1 pound green beans, trimmed
  • Olive oil
  • Butter

Recipe Directions

  1. Cook rice according to package instructions, using chicken broth for added flavor.
  2. In a large skillet, heat olive oil over medium-high heat. Season catfish fillets with salt, pepper, and Cajun seasoning, then dredge in flour and cornmeal mixture.
  3. Add catfish fillets to the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add diced onion, bell pepper, celery, and garlic. Cook until vegetables are soft and translucent.
  5. Add cooked rice to the skillet with the vegetables and stir to combine. Season with salt, pepper, and additional Cajun seasoning, if desired.
  6. Prepare the cheddar bay biscuits according to package instructions.
  7. In a separate skillet, heat butter over medium heat. Add green beans and sauté until tender-crisp.
  8. Serve the pan-seared catfish alongside the dirty rice, cheddar bay biscuits, and green beans. Enjoy!
