Ingredients
- 4 catfish fillets
- 1 cup white rice
- 1 cup chicken broth
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/2 cup buttermilk
- 1 egg
- 1/2 cup shredded cheddar cheese
- 1 can refrigerated biscuit dough
- 1 pound green beans, trimmed
- Olive oil
- Butter
Recipe Directions
- Cook rice according to package instructions, using chicken broth for added flavor.
- In a large skillet, heat olive oil over medium-high heat. Season catfish fillets with salt, pepper, and Cajun seasoning, then dredge in flour and cornmeal mixture.
- Add catfish fillets to the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add diced onion, bell pepper, celery, and garlic. Cook until vegetables are soft and translucent.
- Add cooked rice to the skillet with the vegetables and stir to combine. Season with salt, pepper, and additional Cajun seasoning, if desired.
- Prepare the cheddar bay biscuits according to package instructions.
- In a separate skillet, heat butter over medium heat. Add green beans and sauté until tender-crisp.
- Serve the pan-seared catfish alongside the dirty rice, cheddar bay biscuits, and green beans. Enjoy!
