- Season the chicken breasts with salt and pepper on both sides.
- Dredge the chicken breasts in the flour, shaking off any excess.
- In a large skillet, melt 2 tablespoons of butter and olive oil over medium-high heat.

- Stir in the heavy cream and continue to simmer for another 5 minutes, or until the sauce has thickened slightly.
- Return the chicken breasts to the skillet, spooning the sauce over the top.
- Sprinkle the shredded mozzarella cheese over the chicken breasts.
- Cover the skillet and cook for 2-3 minutes, or until the cheese is melted and bubbly.
- Garnish the Chicken Madeira with chopped fresh parsley before serving.
