Instructions
- Cook the Tortellini:
- In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.
- Prepare the Cheesesteak Filling:
- In a large skillet over medium-high heat, add olive oil. Sauté the onion and bell pepper until softened, about 5 minutes.
- Add the garlic and cook for an additional minute.
- Add the sliced beef, season with salt and pepper, and cook until browned, about 3-5 minutes. Remove from heat and set aside.
- Make the Provolone Sauce:
- In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute to form a roux.
- Gradually whisk in the milk, cooking until the mixture thickens, about 3-5 minutes.
- Reduce the heat to low and stir in the provolone and Parmesan cheeses until melted and smooth. Add Dijon mustard if using, and season with salt and pepper to taste.
- Combine Everything:
- In the skillet with the cheesesteak filling, add the cooked tortellini and pour the provolone sauce over it. Toss gently to combine and heat through.
- Serve:
- Garnish with chopped parsley and serve hot.
