Directions

1. Preheat the Grill or Oven

If using a grill, preheat it to 375°F (190°C). If you prefer using an oven, preheat to the same temperature and line a baking sheet with parchment paper.

2. Prepare the Jalapeños

Wearing gloves (to protect your hands from the heat), slice each jalapeño in half lengthwise and remove the seeds and membranes (for less heat, leave some seeds in if you prefer more spice).

3. Make the Filling

In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Mix until well combined.

4. Stuff the Jalapeños

Using a small spoon or piping bag, generously fill each jalapeño half with the cream cheese mixture.

5. Wrap with Bacon

Cut each slice of bacon in half (or use whole slices for a meatier bite). Wrap a half slice of bacon around each stuffed jalapeño, securing it with a toothpick if necessary.

6. Cook the Texas Twinkies

  • Grilling: Place the stuffed jalapeños on the grill over indirect heat. Close the lid and cook for about 25-30 minutes, or until the bacon is crispy and the jalapeños are tender.
  • Baking: Place the wrapped jalapeños on the prepared baking sheet and bake in the oven for about 25-30 minutes or until the bacon is crispy and cooked through.

7. Serve

Remove from the grill or oven and let them cool for a few minutes. Serve warm, drizzled with BBQ sauce if desired.
