Directions
Step 1: Cook the Rice
- In a medium saucepan, bring 2 cups of water to a boil. Add the uncooked rice and a pinch of salt. Cover, reduce heat to low, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed.
- Once cooked, remove the saucepan from heat and let it sit for a few minutes, covered.
Step 2: Combine Ingredients
- In a separate saucepan, combine the milk, sugar, vanilla extract, ground cinnamon, and salt. Heat the mixture over medium heat until it is warm but not boiling.
- If you’re using eggs, whisk them in a small bowl. Gradually add a small amount of the warm milk mixture to the eggs to temper them, then whisk the egg mixture back into the milk mixture. This will create a creamier texture.
Step 3: Mix in the Rice
- Add the cooked rice to the warm milk mixture. Stir well to combine and bring the mixture to a gentle simmer.
- Cook, stirring frequently, for about 20-25 minutes, or until the pudding thickens to your desired consistency. If you prefer a thicker pudding, let it cook longer.
Step 4: Serve
- Once the pudding reaches your desired consistency, remove it from the heat and let it cool for a few minutes.
- Serve warm in bowls, garnished with a sprinkle of cinnamon and, if desired, raisins or nuts.
Step 5: Chill (Optional)
If you prefer your rice pudding chilled, let it cool to room temperature, then cover and refrigerate for at least 2 hours before serving.
Tips for Success
- Rice Type: Medium or short-grain rice is ideal for this pudding, as it becomes creamier. Long-grain rice can also be used, but the texture may be less creamy.
- Dairy Options: You can substitute whole milk with almond milk, coconut milk, or any non-dairy milk for a different flavor.
- Sweetness Level: Adjust the sugar to your taste. You can also experiment with natural sweeteners like honey or maple syrup.
Storage and Leftovers
Store any leftover rice pudding in an airtight container in the refrigerator for up to 4 days. To reheat, gently warm in the microwave or on the stovetop, adding a splash of milk to restore creaminess.
Variations and Swaps
- Add Fruits: Fresh fruits like sliced bananas, berries, or diced apples can be added for a fruity twist.
- Nutty Flavor: Incorporate chopped nuts like almonds or pecans for added texture and flavor.
- Spice it Up: Experiment with spices like nutmeg or cardamom for a different flavor profile.
