Ingredients
- 2 ripe mangoes (about 2 cups of mango puree)
- 1/2 cup granulated sugar (adjust to taste)
- 1 tablespoon lemon juice
- 1 cup heavy whipping cream
- 2 teaspoons gelatin (optional, for added stability)
- 3 tablespoons water (for gelatin, if using)
Instructions
Step 1: Prepare the Mango Puree
- Peel and chop mangoes: Peel the mangoes and chop them into small pieces.
- Blend: In a blender or food processor, puree the mango pieces until smooth. You should have about 2 cups of mango puree.
- Add sugar and lemon juice: Stir in the granulated sugar and lemon juice to the mango puree. Adjust the sweetness to your preference. Set aside.
Step 2: Prepare the Gelatin (Optional)
- Bloom the gelatin: If using gelatin, sprinkle the gelatin over the water in a small bowl. Let it sit for about 5 minutes until it softens.
- Dissolve the gelatin: Heat the mixture in the microwave for about 10-15 seconds until the gelatin is completely dissolved. Let it cool slightly before adding it to the mango puree.
Step 3: Combine Mango and Gelatin
- Mix with puree: If using, stir the dissolved gelatin into the mango puree until well combined. If not using gelatin, skip this step.
Step 4: Whip the Cream
- Beat the cream: In a separate mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overbeat; you want it to be light and fluffy.
Step 5: Fold the Mixtures Together
- Combine: Gently fold the whipped cream into the mango puree in two to three additions. This keeps the mixture light and airy. Be careful not to deflate the whipped cream.
Step 6: Chill and Serve
- Transfer to serving dishes: Spoon the mango mousse into individual serving cups or bowls.
- Chill: Cover and refrigerate for at least 2-4 hours or until set.
- Serve: Garnish with fresh mango slices, mint leaves, or whipped cream before serving.
Tips for Success
- Choose Ripe Mangoes: For the best flavor, make sure your mangoes are fully ripe. They should feel slightly soft when gently squeezed.
- Adjust Sweetness: Taste the mango puree before adding all the sugar. Some mangoes are sweeter than others, so adjust to your preference.
- Alternative Sweeteners: You can substitute sugar with honey, maple syrup, or agave nectar if you prefer a different sweetener.
