- Make the Caramel:
- In a medium saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar dissolves, then stop stirring and allow the mixture to boil.
- Watch closely as it cooks until it turns a deep amber color, about 8-10 minutes. Once it reaches the desired color, quickly pour the caramel into a round 9-inch cake pan, tilting the pan to coat the bottom evenly. Set aside to cool and harden.
- Prepare the Flan Mixture:
- In a large mixing bowl, whisk together the pumpkin puree, sweetened condensed milk, evaporated milk, eggs, vanilla extract, ground cinnamon, nutmeg, ginger, and salt until smooth and well combined.
- Pour the Flan Mixture:
- Carefully pour the pumpkin mixture over the cooled caramel in the cake pan.
- Bake the Flan:
- Preheat your oven to 350°F (175°C). Place the flan pan inside a larger baking dish. Pour hot water into the larger dish until it reaches halfway up the sides of the flan pan (this creates a water bath).
- Bake for about 50-60 minutes, or until the flan is set and a knife inserted into the center comes out clean.
- Cool and Unmold:
- Once done, remove the flan from the oven and let it cool at room temperature for about 30 minutes. Then, refrigerate for at least 4 hours or overnight to fully set.
- To unmold, run a knife around the edges of the pan. Place a large plate over the pan and quickly invert it. Gently lift the pan off to reveal the flan, allowing the caramel to drizzle over the top.
