Instructions:
1. Preheat and Prepare:
- Preheat your oven to 180°C (356°F).
- Grease your baking dish with a teaspoon of solid oil.
2. Mix the Wet Ingredients:
- In a large bowl, whisk 4 eggs and 1.5 cups of granulated sugar until frothy and white.
- Add 1 cup each of milk and oil, whisk for another 10 seconds.
3. Combine Dry Ingredients:
- Sift together 2.5 cups of flour, 2 packets of baking powder, and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
4. Mix Carrots, Walnuts, and Cinnamon:
- Combine 1 teaspoon of cinnamon, 2 cups of shredded carrots, and 1 cup of chopped walnuts.
- Stir well before adding to the batter.
5. Bake the Cake:
- Pour the batter into the prepared baking pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan before transferring to a wire rack.
6. Serving:
- Dust the cooled cake with powdered sugar.
- Serve sliced with hot coffee or tea.
