Cheese-Stuffed Pretzels

Prepare the Dough:
In a large bowl, combine flour, sugar, salt, and yeast. Gradually add the warm water and stir until the dough begins to form.
Knead the dough on a floured surface for about 5 minutes, until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
Form the Pretzels:
Preheat your oven to 450°F (230°C). Punch down the risen dough and divide it into 8 equal pieces.
Roll each piece into a long rope, about 12 inches in length. Flatten each rope slightly and place a few cubes of cheddar cheese along the center.
Carefully pinch the dough around the cheese to seal it, then shape the dough into a pretzel form.
Prepare the Baking Soda Bath:
In a large pot, bring 6 cups of water to a boil. Stir in the baking soda.
Carefully dip each pretzel into the boiling water for about 30 seconds, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.
Bake the Pretzels:
Brush the pretzels with melted butter and sprinkle with coarse salt.
Bake for 12-15 minutes, or until the pretzels are golden brown and the cheese is melted.
Serve:
Allow the pretzels to cool slightly before serving warm.
