In a skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 30 seconds. Add chicken pieces, Italian seasoning, salt, and pepper. Cook for 5-7 minutes, until golden and cooked through. Remove from the skillet and set aside.
Make the Creamy Sauce:
In the same skillet, add olive oil and heavy cream. Bring to a gentle simmer, then whisk in Parmesan cheese until smooth. If the sauce is too thick, add reserved pasta water to reach desired consistency. Season with salt, pepper, and red pepper flakes if desired.
Combine and Serve:
Return the cooked chicken and pasta to the skillet, tossing to coat in the sauce. Add the remaining butter and stir until melted. Garnish with chopped parsley and serve hot
