Puff Pastry Triangles

For the Filling:

  • 1 cup finely diced cooked chicken (or your choice of protein)
  • 1/2 cup finely chopped spinach
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped sun-dried tomatoes
  • 1/4 cup chopped Kalamata olives
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For Egg Wash:

  • 1 egg, beaten
  • 1 tablespoon water

Instructions:

1. Prepare the Puff Pastry: a. In a large bowl, combine the flour and salt. b. Add the diced cold butter to the flour mixture and use a pastry cutter or your hands to incorporate the butter until the mixture resembles coarse crumbs. c. Gradually add the cold water, mixing until the dough comes together. Be careful not to overmix. d. Shape the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least 1 hour.

2. Create Layers in the Dough: a. Roll out the chilled dough on a floured surface into a rectangle about 1/4 inch thick. b. Fold the dough into thirds like a letter, then turn it 90 degrees and roll it out again. c. Repeat this process (known as laminating) 4-5 times, refrigerating the dough between each turn.

3. Prepare the Filling: a. In a bowl, combine the diced chicken, chopped spinach, feta cheese, sun-dried tomatoes, olives, oregano, salt, and pepper. Mix well.
