Recipe Directions
- Preheat your oven to 350°F (175°C). Grease and flour a 15×10 inch jelly roll pan or baking sheet.
- In a large mixing bowl, combine the flour, sugar, baking soda, and salt. Set aside.
- In a medium saucepan, combine the butter and water. Bring to a boil over medium heat, stirring occasionally.
- Once the mixture comes to a boil, remove it from heat and pour it over the dry ingredients in the mixing bowl. Stir until well combined.
- Add the lightly beaten eggs, sour cream, coconut extract, and shredded coconut to the mixing bowl. Stir until the batter is smooth and well incorporated.
- Pour the batter into the prepared jelly roll pan, spreading it out evenly.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the coconut glaze. In a small saucepan, melt the butter over low heat. Stir in the coconut milk and bring the mixture to a simmer.
- Remove the saucepan from heat and gradually whisk in the powdered sugar and coconut extract until smooth.
- Once the cake is done baking, remove it from the oven and immediately pour the warm coconut glaze over the hot cake, spreading it out evenly.
- Sprinkle the shredded coconut over the top of the glaze while it’s still warm.
- Allow the cake to cool completely before slicing and serving.
