1 medium head of green cabbage (about 2 lbs), chopped
1 large onion, chopped
3 cloves garlic, minced
2 tablespoons olive oil (or butter)
1 cup vegetable broth (or chicken broth)
1 teaspoon smoked paprika (optional, for extra flavor)
1 teaspoon cumin (optional, for added depth)
Salt and black pepper, to taste
1 tablespoon apple cider vinegar (optional, for a tangy finish)
Fresh parsley, chopped (for garnish)
How to Make Stewed Cabbage
Step 1: Prep the Cabbage
Remove the outer leaves of the cabbage and rinse it under cold water.
Cut the cabbage into quarters, remove the core, and chop into bite-sized pieces. Set aside.
Step 2: Sauté the Onion and Garlic
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the chopped onion and cook until softened and translucent, about 5 minutes.
Add the minced garlic and cook for another 1-2 minutes, until fragrant.
Step 3: Add the Cabbage
Add the chopped cabbage to the pot, stirring to coat it with the oil, onions, and garlic.
Cook for about 5 minutes, allowing the cabbage to wilt slightly.
Step 4: Simmer the Cabbage
Pour in the vegetable or chicken broth, and stir in the smoked paprika, cumin (if using), salt, and pepper.
Bring the mixture to a simmer, then reduce the heat to low.
Cover the pot and let the cabbage stew for about 25-30 minutes, stirring occasionally, until the cabbage is tender and infused with the flavors of the broth.
Step 5: Finish and Serve
Once the cabbage is tender, stir in the apple cider vinegar if you want a bit of tang.
Taste and adjust the seasoning with more salt and pepper if needed.
