Crock Pot Crack Potato Soup

Ingredients

  • 6 medium-sized potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth)
  • 1 (8 oz) block cream cheese, softened
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1 cup cooked bacon, crumbled (reserve some for topping)
  • 1 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup heavy cream (optional, for extra creaminess)
  • Green onions, chopped (for garnish)

Instructions

Step 1: Prepare Ingredients

  1. Prepare the potatoes: Peel and dice the potatoes into bite-sized pieces.
  2. Chop the onion and garlic: Finely chop the onion and mince the garlic.

Step 2: Combine Ingredients in the Crock Pot

  1. Layer the ingredients: In your Crock Pot, add the diced potatoes, chopped onion, minced garlic, chicken broth, and spices (parsley, paprika, salt, and pepper).
  2. Mix in the cream cheese: Cut the softened cream cheese into chunks and add it to the pot.

Step 3: Cook the Soup

  1. Set the Crock Pot: Cover and cook on low for 6-8 hours or on high for 4 hours, until the potatoes are tender.

Step 4: Blend and Add Cheese

  1. Blend the soup (optional): For a smoother texture, use an immersion blender to puree some of the soup. You can also transfer a portion to a blender and blend until smooth, then return it to the Crock Pot.
  2. Add the cheese and bacon: Stir in the shredded cheddar cheese and crumbled bacon. If you want extra creaminess, add the heavy cream. Let it cook for another 15-30 minutes until the cheese is melted and the soup is heated through.
